Ingredients

  • 200gham or diced ham
  • 1pcs.puff pastry
  • 0,5bunchchives or spring onions
  • 250gmushrooms
  • 200gneutral cream cheese
  • 1tbsp.mustard
  • 1tbsp.lemon/lime juice
  • 1pcs.egg for brushing
  • 1tbsp.oil for frying
  • 1tsp.salt
  • 0,5tsp.black pepper

Tools

  • Baking tray
  • Parchment paper
  • Pan
  • Rolling pin/wine bottle
  • Bowl

Tips

  • If you can't find a large roll of puff pastry, you can piece together several small sheets by overlapping the edges and pressing them together.
  • If you don’t have a rolling pin to flatten the puff pastry, you can either use a wine bottle or just press it out with your hands.
  • There shouldn’t be too much liquid in the mushrooms, as they will release liquid in the oven and make the puff pastry soggy.
  • Mushrooms should be rinsed with water, not soaked, as they absorb liquid.
  • The ham stick can be stored in the refrigerator for 2-3 days in an airtight container.
  • You can also freeze the ham stick, but be aware that the puff pastry may change texture after thawing and reheating.

Goes well with

  • Starter
  • Main course

Instructions

  • 1

Clean the mushrooms with water and slice them thinly - if the mushrooms are very large, you can halve them before slicing.

  • 2

Heat the pan with a little oil, add the mushrooms, sprinkle with a little salt, and fry until they turn golden.

  • 3

If you have a piece of ham, cut it into fine cubes and place them in the bowl.

  • 4

Chop the chives into fine pieces and add them to the bowl.

  • 5

Add the cream cheese, the fried and cooled mushrooms, mustard, lemon juice, salt, and pepper to the bowl, and mix it together.

  • 6

Prepare a baking tray with parchment paper, and place the puff pastry on it.

  • 7

Flatten the puff pastry to the desired size (approximately 25x30 centimeters).

  • 8

Place the filling from the bowl lengthwise in the center of the puff pastry - leave about 5 centimeter free at both ends, so it can be wrapped properly.

  • 9

Cut diagonal strips in the puff pastry about 2-3 centimeters wide.

  • 10

Fold up the first end to prevent the filling from spilling out.

  • 11

Once the first end is folded up, alternate folding the strips over each other.

  • 12

When there are about 3 strips left, fold up the last end and fold the remaining strips over as before.

  • 13

Beat 1 egg with a fork in a bowl and brush the ham stick with the egg.

  • 14

Bake it in the middle of the oven at about 180°C degrees for 35-45 minutes, or until it has puffed up and turned golden.

  • 15

Let it cool slightly before serving.

  • 16

    Enjoy your meal!
